How are the link and the label different?
The Interprofessional Association of Iberian Pork (ASICI) is the entity responsible for managing the sealing of Iberian products to identify and ensure traceability and transparency in the production and marketing of Iberian hams and loins. To do this, it uses two key elements: seals and ham labels.

Ham ties: The security seal used for hams is a knot-type seal that incorporates a tab and an adjustable rod to prevent tampering. It is made of plastic and attaches to the ham's spine or shoulder. The Iberian ham quality standard requires these ham ties to be the same color as the product (white, green, red, and black).

Ham labels: These cover the ham below the tie and are usually made of cardboard or plastic. There is no rule regarding the label's color, but it must contain the same information as the security seals.
What information do ham seals and labels contain?
Les informations que contiennent les liens pour jambons et les étiquettes doivent correspondre et suivre les règles établies par la norme de qualité du jambon ibérique. Doivent figurer les éléments suivants :

Type de produit : si s'agit d'une palette ou d'un jambon, d'une part, et s'il s'agit d'échine, de longe ou de longe farcie, d'autre part.

Type d'alimentation : bellotas, cebo de campo ou cebo.

Race du porc : le lien et l'étiquette doivent indiquer le pourcentage de race ibérique de l'animal dont elle provient.

Norme de qualité et certificat : dans le cas où le produit respecte la norme de qualité du jambon ibérique, son identification doit figurer sur le scellé de sécurité. Sur l'étiquette, il faut qu'apparaisse le nom ou l'acronyme de l'organisme de certification qui approuve le contrôle du produit.

Logos : le lien de sécurité doit porter le logo ASICI sur la languette.
